What a feast for the eyes (and the stomach)! A stunning combination of a simple waffle and buttery maple goodness with a mix of caramalised banana and fresh fruit. A simple, yet perfect dish to make for someone special!

Cook time – 4-5 minutes per waffle
Serves – Makes 8 large waffles
Ingredients
Waffles:
3 eggs, separated
60g Westgold Butter, melted
1 ½ cups plain flour
1 tsp baking powder
1 ¼ cups milk
1 tsp vanilla essence
2 tbsp sugar
2 tsp brown sugar
2 tsp lemon juice
2-3 bananas
2-3 peaches
½ cup toasted walnuts, chopped
maple syrup
Whipped Maple Butter:
50g soft Westgold Unsalted Butter
2-3 tbsp maple syrup
squeeze lemon juice
pinch salt
Method
To make the maple butter:
Place the soft butter into a small bowl and beat with an electric whisk until light and creamy.
Keep beating while slowly pouring in the maple syrup.
Add lemon juice and salt. Taste and add more lemon juice or salt if desired.
Cover and keep at room temperature until needed.
To make the waffles:
Turn the waffle maker on to heat up.
Place the flour, baking powder and sugar in a bowl and stir to combine.
In another bowl, whisk together the egg yolks, milk and vanilla.
Pour egg mix into the flour mix and whisk gently until it forms a smooth batter.
Fold in the melted butter.
Whisk the egg whites until soft peaks and fold into the batter.
Spoon into the hot waffle maker and close the lid and cook for 4-5 minutes (or longer if you like them extra crispy).
While the waffles are cooking, caramelise the bananas by heating the butter and brown sugar together until sizzling.
Peel bananas, cut in thick diagonal slices and fry in the butter and brown sugar for a minute or two in each side.
Cut the fresh peaches into slices.
Place the warm waffles on a serving plate, add a dollop of maple butter and top with banana, peach and sprinkle with walnuts.
Serve with extra warmed maple syrup.
The waffles can be reheated in the waffle maker or toaster (on a low setting) the next day.
Makes 8 large waffles.
This mixture will also work for pancakes if you don’t have a waffle machine.
